The Story Behind These Mini Blueberry Pancake Bites

When I first started my keto journey, I was all about egg for breakfast. I made eggs almost every morning.

And I was happy because I love eggs no matter how they’re cooked!

I hit the egg wall. and reached a point where I could not even stand to look at eggs for breakfast, no matter how they were cooked. I was shocked, but it was the reality.

I am not a breakfast sweet and treat kind of girl, but these were a wonderful change, in addition to not being as sweet as the original, Keto recipes are usually less sweet than the traditional versions.

Eventually, the kids, Mr., and grand kids decided they were pretty good, and I thought about making them in a small bite version, and making ahead/meal-prep kind of situation.

I mean, who doesn’t appreciate reducing the amount of work it takes to put together your AM meal? Or any meal!

I actually did it more for Daniel because he is notorious for not eating anything in the morning and then is starving by lunchtime.

Now, with this recipe, I can give the kiddos dippable mini pancakes that I can freeze for later. It is a twofer!!

Cream Cheese: This is the secret to the rich, tender texture. It keeps the pancakes soft and slightly creamy without needing milk.

Eggs: They provide structure and help the bites puff up nicely in the oven.

Vanilla Extract: A small amount makes a big difference, adding warmth and that classic pancake flavor.

Monk Fruit & Allulose Sweetener: Gives just enough sweetness without spiking blood sugar. Keto recipes are never overly sweet, and that’s why I love them.

Keto Maple Pancake Syrup: Adds depth of flavor right into the batter, not just on top.

HOW TO MAKE KETO MINI BLUEBERRY PANCAKE BITES

Step-by-Step Instructions

Step 1: Preheat the Oven

Preheat the oven to 375 degrees F.

Step 3: Blend the Batter

Use butter to grease the mini muffin pan. It is important to grease the pan in order to make your mini pancakes as easily as possible to make sure they don’t stick to the pan. You can also double grease the pan by using coconut oil spray to grease the mini muffin pan after buttering it.

Step 3: Blend the Batter

Put the cream cheese, eggs, maple syrup, vanilla, and sweetener in a blender and blend until the mixture is smooth. Add the almond flour, salt, and baking powder to the blender. Blend the mixture again until it is smooth.

Step 4: Fill the Muffin Pan

Take the batter and pour enough to fill 24 mini muffins (slightly more than 1 tablespoon of batter per muffin) into the mini muffin pan.

Step 5: Add the Toppings

Use the blueberries and chocolate chips if they are desired (4 per muffin is usually good) and press them lightly into the top of the batter.

Step 6: Bake

Bake the mini muffins for approximately 15 to 20 minutes. You will know they are done when the top is golden brown and the insides are done.

Step 7: Serve

If wanted, serve the mini pancakes with the Sugar Free Maple syrup and powdered Sweetener (a blend of Monkfruit, Allulose, and sweetener)

FAQS ABOUT KETO MINI BLUEBERRY PANCAKE BITES

Can I make these mini pancakes using coconut flour?

I haven’t tried them with coconut flour before. Coconut flour definitely isn’t a direct substitute for other flours, so it would take some trial and error to perfect it. A recipe I use for doing flour substitutions would be to use about  1/4th of a cup more of coconut flour than almond flour, so again I haven’t tried that, so I can’t say with confidence that it will work.

Can I use other topings (berries) instead of blueberries?

Yes, berries of all kinds, including strawberries, are among the low carb fruits we are allowed, so these are delicious with chopped strawberries.

Can I freeze the Keto Mini Blueberry Pancake Bites?

Yes, they are actually great frozen, I will describe more in the next section, but, allow them to cool completely, place them on a baking sheet and freeze in a single layer. After they are frozen, put them in a zipper top bag or a freezer safe container. I have kept them for up to 3 months in the freezer.

These Mini Keto Pancake Bites freeze beautifully!

This is actually what I was trying to do when I designed this recipe. I wanted a breakfast option for the Mr. and the kiddos that I could just grab and go, while also cutting down on the amount of morning work I had to do in the kitchen.

To freeze pancake bites, allow them to cool completely, then place them on a baking sheet in a single layer, and freeze. Once they are completely frozen, you can transfer them to a zip top freezer bag and/or container.

REHEATING

To reheat pancake bites, I put the desired amount of pancake bites into a damp paper towel and then pop them in the microwave. How long you do this for depends on your microwave and how many you are reheating, so just keep an eye on them and see when they are done!

Pancake bites are great with powdered sugar substitute and dipped in the keto maple syrup!

Ingredients

  • 4 ounces cream cheese room temperature

  • 1/2 teaspoon pure vanilla extract

  • 1 tablespoon Keto Maple Syrup

  • 1/2 cup Almond Flour

  • 4 large eggs

  • 1/2 teaspoon gluten-free baking powder

  • 1/4 teaspoon pink salt

  • 2 teaspoons Monk Fruit and Allulose Sweetener

  • Blueberries (or other berries)

  • 1/2 cup Almond Flour

Directions

  • Preheat your oven to 375°F.
  • Grease a mini muffin pan really well this step is key so the pancake bites don’t stick. For extra insurance, you can butter the pan first and then lightly spray it with coconut oil.
  • In a blender, combine the cream cheese, eggs, vanilla, sweetener, and maple syrup. Blend until completely smooth.
  • Add the almond flour, baking powder, and salt to the blender and blend again until the batter is silky and lump-free.
  • Spoon the batter into the mini muffin pan. You’ll get about 24 mini pancake bites, using a little over a tablespoon of batter for each.
  • If you’re adding blueberries or chocolate chips, gently press 4–5 into each muffin.
  • Bake for 15–20 minutes, until the tops are golden and the centers are set.
  • Serve warm, optionally with a dusting of powdered sweetener and a drizzle of keto maple syrup.

Notes

  • If you decide to add berries or sugar-free chocolate chips, be sure to factor them into your total macros and net carbs.
