This recipe is inspired by our popular keto blueberry scones, but these drop biscuits are lightly sweet on their own and get most of their sweetness from the sugar-free lemon glaze on top.

Low-Carb Blueberry Biscuits

In case you’ve never had the opportunity to taste these biscuits, they are truly a delightful breakfast treat! These sugar free blueberry biscuits are a great breakfast.

My recipe involves a biscuit, mildly sweet, full of blueberries, with a lemon glaze to add the perfect amount of tang and sweetness.

An extra bonus is that these keto biscuits are loaded with antioxidant-rich blueberries in every bite.In a keto diet, we are limited with the fruit we can eat, but you can always fit in a small handful of berries as a treat.

This is the great thing about keto baking with berries! You get to eat a small amount of fruit that is already portion controlled for you!

And since blueberries are packed with great flavor and nutrition, these sugar free biscuits are great as you only need a few to go a long way.

In addition to being great for your health, these biscuits are also healthier than the normal sweet biscuit that is usually packed with sugar.

Ingredients Sugar-Free Keto Blueberry Biscuits

Below is a list of the ingredients and tools you will need to make these sugar-free blueberry biscuits. You will find the full recipe with exact measurements at the end of the post.

  • Granulated sugar-substitute
  • Confectioner’s sugar-substitute
  • Eggs, room temperature
  • Sour cream
  • Melted butter, unsalted

How To Make Keto No-Roll Sugar Free Blueberry Biscuits

This blueberry drop biscuit recipe is incredibly easy.  To start, melt your butter, and let it cool a bit. Then a big mixing bowl and add butter, eggs, and a sugar substitute.

Next add in your sour cream, and then the lemon extract along with the lemon zest. In the same bowl, add in dry ingredients. Finally, fold in some blueberries.

Then, the next step is to portion the batter, ‘dropping’ it into your pre-greased cast iron skillet or parchment-lined cookie sheet.

This recipe should yield five big biscuits, which is two servings, or ten smaller ones. As the blueberry biscuits bake, you can start on the sugar-free lemon glaze.

For the lemon glaze, just grab a small bowl and mix in your confectioners sugar substitute, some lemon juice, lemon extract, and a portion of heavy cream.

I like to drizzle some of the glaze over the biscuits while they are still hot so it melts and soaks in for extra lemony sweetness, then add the rest once they have cooled.

You can select whichever option you like or you can select both options.

The Best Sugar-Substitute These Keto Biscuits

Keto Blueberry Biscuits Cooked in a Cast Iron Skillet. When it comes to low carb biscuits, there are a few options to choose from when picking a sugar substitute.

Lakanto Monk Fruit

As a first option, I choose Lakanto Monk Fruit because it is one of the best options in terms of having a good texture, low aftertaste, and it being a little healthier than most other options.

Monk fruit is a great healthy sugar alternative. It has zero calories, and no glycemic impact due to it getting its sweetness from antioxidants, named mongrosides, rather than from sugar.

Swerve

My personal favorite is also Swerve, an erythritol blend. Unlike other natural sweeteners, Swerve does not have a bitter aftertaste, and it also measures the same as sugar.

It is made from certain fruits and starchy root vegetables, and it does not contain any artificial ingredients, preservatives, or flavors. Swerve is the erythritol brand, and is also special because unlike other artificial sweeteners, it has zero impact on blood sugar.

Pyure

For most of my baking, I also like to use the brand Pyure, as it is made from stevia and erythritol.

However, when using Pyure, for this recipe you should use half the recommended amount, as it is much sweeter. ¼ cup is sufficient when using this sweetener.

Splenda

Lastly, if you can’t easily find natural sweetener alternatives, using Splenda works quite well as it is the one that comes in the larger bags.  

Even though Splenda is not an all-natural sugar substitute, in my personal opinion, it is still better than having the sugar.

Not everyone has easy access to the more natural substitutes, plus it is reasonably priced, so I recommend it.

Sugar-Free Icing

However, with the sugar-free icing for these blueberry biscuits, you have to use a confectioner’s sugar substitute. Lakanto and Swerve both have good ones.

Can I use frozen blueberries for this recipe?

Yes! You can use frozen blueberries without defrosting them first. Just fold them gently into the batter to avoid breaking them.

What sugar substitutes work best for these keto biscuits?

The best options are Lakanto Monk Fruit, Swerve, or Pyure. Lakanto and Swerve also have confectioner’s sugar substitutes for the glaze. If you prefer, Splenda can be used as well.

How do I get the glaze to soak into the biscuits?

Drizzle some of the glaze over the biscuits while they’re still warm so it melts and seeps in for extra sweetness. Once cooled, you can drizzle the remaining glaze on top.

Ingredients

  • Keto Blueberry Biscuits

  • 6 ounces fresh or frozen blueberries

  • 1 ½ cups of finely milled almond flour

  • ½ cup of full-fat sour cream

  • ½ cup of coconut flour

  • 3 tablespoons of unsalted melted butter

  • ¼ cup of granulated sugar substitute

  • 1 ½ teaspoons of baking powder

  • ¼ teaspoon of sea salt

  • 3 eggS

  • ½ teaspoon of lemon extract

  • Keto Lemon Icing

  • ½ cup of confectioners’ sugar substitute

  • ½ teaspoon of lemon extract

  • 1-2 tablespoons of heavy whipping cream

  • 2 tablespoons of fresh lemon juice

Directions

  • Preheat oven to 375°F (190°C).
  • Grease a 9-inch cast-iron skillet with butter or line a small baking sheet with parchment paper.
  • Melt butter and let it cool.
  • Using an electric mixer, combine sugar substitute, cooled melted butter, lemon extract, and eggs.
  • Add sour cream and mix well.
  • Stir in dry ingredients: almond flour, coconut flour, baking powder, and salt until fully combined.
  • Fold in fresh or frozen blueberries; no need to defrost if using frozen.
  • Drop batter by large spoonfuls onto skillet or baking sheet. Make five large biscuits (10 servings) or ten small biscuits.
  • Bake large biscuits for 20–30 minutes or until a toothpick comes out clean; small biscuits bake 18–25 minutes.
  • Cool biscuits for 5–8 minutes before drizzling lemon icing on top.
  • Keto Lemon Icing
  • In a small bowl, mix the confectioners’ sugar substitute, lemon juice, lemon extract, and heavy whipping cream. Drizzle over slightly cooled biscuits.

  • This recipe makes 5 large biscuits, each serving 2, or 12 small biscuits baked for 18–25 minutes.
  • Store biscuits in the refrigerator for up to 5 days or freeze for up to 3 weeks.
