Low Carb Keto Almond Flour Crepes

Crepes are one of my favorite keto breakfasts to make. Other favorites are cinnamon rolls and French toast casserole.When I have extra time in the mornings, I really enjoy preparing these breakfasts.

Some of the perks of flexible schedules are I can get extra sleep, work on weekends (which I don’t) and set aside more time to make elaborate breakfasts. To be honest, however, I don’t usually. I make elaborate breakfasts, I actually try to spend less than 5 minutes making a breakfast.

I try to make pancakes or overnight oats, which I can prepare in advance (yes even pancakes). I’ve been on a pancake kick. I wanted to change things up and I’ve been loving crepes!

Why I Love These Low Carb Keto Cream Cheese Crepes

For a while now, I’ve wanted to share a recipe for keto friendly crepes. I’m guessing this is a result of my almond flour obsession, inspired by things like my almond flour muffins and cookies. It’s been a game changer for me to use almond flour for these crepes since a proper crepe is supposed to have a super light texture.

Even though I’ve talked about crepes as an ideal breakfast, they are actually super quick and easy to make. Their texture is spot on- light, airy, and fluffy. They have a hint of sweetness to them and are super eggy.

I made these crepes for some friends I had for a brunch and NO ONE believed me that these crepes are keto and sugar free!- only thought they were made with flour!

Ingredients: Low Carb Keto Cream Cheese Crepes

Almond flour: Be sure to use blanched almond flour, not almond meal. Almond meal is much heavier and will make the crepes dense, while blanched almond flour keeps them light, soft, and fluffy.

Sweetener of choice: Erythritol or monk fruit sweetener is fine. These will sweeten the crepes but feel free to add more sweetness through your fillings.

Salt: A tiny pinch is enough to balance the sweet flavors.

Eggs: Use room temperature eggs.

Cream cheese: You can use dairy-free or regular cream cheese. Make sure it’s softened and at room temperature.

Milk: I used unsweetened almond milk, but feel free to use any milk you have.

What is the process of making almond flour crepes?

To make your batter, start by mixing the dry ingredients in a bowl. In a high-speed blender, combine the cream cheese, blended eggs, and the eggs. Blend gently until mixed. Then, add the dry ingredients and blend until a batter is formed. Return the batter to the mixing bowl, and set aside for 10 minutes.

Using a non-stick pan or skillet, add a little butter or a cook spray. Center the pan and pour in a little less than a 1/4 of the batter. Then, roll the pan to help the batter spread out. Let the batter cook for 2 to 3 minutes, then flip and cook for another 2 minutes. Do this until you finish the batter.

Tips for making the low carb keto crepes

  • You can use a mixing bowl instead of a blender. Just be sure the cream cheese is softened.
  • The best way to make large, easy to fold and fill crepes is to spread the batter as thin as you can.
  • Make sure to add more spray butter to the pan after each crepe.
  • These crepes won’t be too sweet, but if you want sweet crepes and won’t use sweet fillings, add more sweetener to the batter.
  • Vanilla ice cream or coconut milk ice cream is a great way to top off your crepes.

Low Carb Keto Cream Cheese Crepe Filling Ideas

Unlike pancakes: crepes are perfect for filling with all kinds of toppings. Here are a few of my favorite ways to enjoy them.

Syrup and butter: A classic style. A little butter and some sugar free maple syrup.

Nutella and strawberries: Great sweet option! Fill crepes with homemade Nutella and strawberries.

Whipped cream cheese and mixed berries: take some softened cream cheese and whip with some erythritol. Spread some whip inside the crepes and top with mixed berries.

Coconut whipped cream and sugar free powdered sugar: You can use a homemade keto powdered sugar.

Ham and cheese: For a more Savory. option, avoid the sweetener from the crepes. Fill with sliced cheese and shredded ham.

Storing and freezing crepes

To store: Place leftover crepes in the refrigerator so they do not dry out. They will store well for 5 days.

To freeze: You may fold crepes in parchment paper and place in a ziplock bag. They may be stored in the freezer for up to 6 months. They must be thawed completely prior to reheating.

To reheat: It is best to enjoy crepes after being microwaved for 20-30 seconds. They are meant to be fluffy and soft, not overly crispy. If you sweat a crepe in a pan, do not leave it on for too long, just enough to warm it up.

Ingredients

  • 2/3 cup almond flour

  • 1/4 cup granulated sweetener (monk fruit or erythritol)

  • 3 oz cream cheese, softened

  • 4 large eggs

  • 1/4 teaspoon salt

  • 1/4 cup milk of choice (unsweetened almond milk used)

Directions

  • In a small bowl, combine all your dry ingredients and stir them together until evenly mixed. In a high-speed blender, add the softened cream cheese, eggs, and milk, and blend until smooth. Gradually add the dry ingredients to the blender and blend again until you have a smooth, lump-free batter.
  • Pour the batter into a mixing bowl and let it rest for about 10 minutes. This allows the batter to thicken slightly, making it easier to cook delicate, thin crepes.
  • Heat a non-stick skillet or pan over medium heat and lightly grease it with butter or cooking spray. Once hot, pour about 1/4 cup of the batter into the center of the pan. Lift and tilt the pan to swirl the batter evenly into a thin circle.
  • Cook the crepe for 2–3 minutes, then carefully flip it and cook for another 2 minutes. Remove the crepe from the pan. Re-grease the pan as needed and repeat the process with the remaining batter.
  • Once all the crepes are cooked, fill them with your favorite sweet or savory fillings and serve immediately. Enjoy your light, fluffy low-carb crepes!
