The mushrooms will be a great part of the meal.  There is a large amount of butter and garlic used with some minced onion.  There is plenty of seasoning with salt and pepper, and the addition of some fresh herbs. you will have the best side dish ready in just 15 minutes.

INGREDIENTS: KETO GARLIC BUTTER ROASTED MUSHROOMS

The main ingredient in this recipe is sliced mushrooms! For this recipe, I personally choose to use cremini mushrooms, which are just the immature version of portobello mushrooms!

If you don’t have cremini mushrooms, don’t worry. Try to use mushrooms labeled as baby Bella’s, or even the traditional button mushrooms – they will also work in this recipe and will taste just as good!

For this, you will also need:

  • Butter. I personally use the unsalted variety, to have control over the salt content.
  • Garlic. A couple of cloves of fresh.
  • Onion. I personally like to add some onion, but it is easy to leave it out if you want to cut down on the carbs.
  • Thyme. This can be fresh or dried.
  • Parsley. Fresh is preferred, but this is also a good use for dried parsley.
  • Salt, and pepper. Freshly cracked if you have it.

You can use dried parsley in lieu of fresh. You will want to use dried parsley than for fresh, as dried is usually more potent.

Another very simple option is to use a small amount of dried Italian seasoning in place of the thyme and parsley. This will taste different, but it will still be a good flavor and will work for this recipe.

Are Mushrooms Keto?

On a keto diet, mushrooms are great to have and, according to the USDA, are one of the best keto friendly vegetables. One cup (70g) of raw mushrooms contains:

  • 2.28 grams carbs
  • 0.7 grams fiber
  • 0.2 grams of fat
  • 2.16 grams of protein

Mushrooms are a great and healthy low carb food option. They are also a decent source of a variety of nutrients, including copper, B vitamins, and even some soluble fiber.

A cup of raw mushrooms contains approximately 1.5 net carbs and 15 calories.

HOW TO MAKE KETO GARLIC BUTTER ROASTED MUSHROOMS

Cooking mushrooms with garlic and butter is a simple and quick recipe that can be done in a single skillet in about 15 to 20 minutes.

1. To start, preheat a heavy skillet or cast iron pan over medium to high.  Add your butter, diced onion, and stir for  a few minutes.  Once your onions start to caramelize, throw in your mushrooms.

2. You’ll want to saute your mushrooms for about 10 to 12 minutes over medium heat, or until they are tender.  Be aware that the mushrooms will release and then evaporate some liquid, but they will start to brown.

3. After that, the garlic and herbs are next and stir for one or two minutes until your kitchen smells amazing.

4. I add my chopped garlic right at the end so it doesn’t burn or turn bitter while the mushrooms brown. Once the mushrooms are done, 2 minutes is enough time to cook with fresh garlic, if it’s minced finely.

5. Lastly, add to your taste with salt, pepper, and parsley to garnish. Easy right?

How to Wash Mushrooms

Before we continue, let’s discuss washing and preparing the mushrooms before you put them in the pan.

Some people might have told you that you shouldn’t wash mushrooms, but I’m here to tell you that washing them is fine!

I usually brush off some of the dirt and then put the mushrooms under some cold running water. They need to be patted dry with a paper towel before you start cooking.

You shouldn’t fully submerge the mushrooms in water. If you do, the mushrooms will absorb the water and lose their ability to brown when cooked.

How To Store These Garlic Mushrooms?

Mushrooms are one of the hardest vegetables to keep because of how easily they can absorb moisture which can make them soggy.

Your leftover mushrooms can just be put in a sealed container in the fridge and will last a week, so feel free to enjoy them any time!

Can I Make This Recipe In Air Fryer?

Of course! Just preheat the air fryer to 400, and then mix the rest of the ingredients and add the the mushrooms to the basket.

After 6 minutes of air frying, shake the basket to toss the mushrooms and continue to air fry them.

Ingredients

  • 4 tbsp butter

  • 1/2 cup onion

  • 2 tsp garlic, minced

  • 1 pound mushrooms

  • 1 tbsp parsley, chopped

  • 1/2 tsp salt (or to taste)

  • 1 tsp fresh thyme

  • 1/4 tsp black pepper (or to taste)

Directions

  • Place a large pan or skillet on the stove and heat the butter over medium-high heat until it’s fully melted and starts to sizzle.
  • Add the chopped onion to the pan and sauté, stirring occasionally, until it becomes soft and slightly translucent, about 3 minutes.
  • Add the mushrooms to the pan and cook for about 10 minutes, stirring now and then, until they release their moisture and turn golden brown.
  • Stir in the garlic and herbs, then cook for another 1 to 2 minutes until everything is fragrant.
  • Season generously with salt and pepper to taste, give it a final stir, and remove from the heat.

Notes

  • If your mushrooms are on the larger side, cut them in half or into quarters. Smaller mushrooms can be left whole.
  • If you’re using dried herbs instead of fresh, use about half the amount.
  • To lower the carbs even more, you can skip the onions entirely.
