Just like the temperature is cooling, the soups are heating up! If you’ve been around for a while, you likely know that Fall is my absolute favorite season! Cozy sweaters, stylish boots, and, the ever important, keto comfort food.

This soup may just be a bit higher in carbs than you expect, and that is because of the cream, the seasonings, the vegetables, etc. However, I consider those to be good carbs and totally worth the small increase, especially since they also add nutritional value.

If you’re on a different journey, and are going for a lower calorie soup, feel free to remove some of the vegetables and/ or just eat a smaller portion.

What is keto Creamy zuppa toscana soup?

Zuppa Toscana is an Italian soup, with Zuppa meaning soup and Toscana meaning Tuscany.

When Americans eat this soup at Olive Garden, they experience a version of Zuppa Toscana that is more American than Italian.

In Italy, Zuppa Toscana is made with Zuppa Toscona beans and Italian zuccini the Zuppa Toscana soup zucchini, beans, and possibly zucchini. Instead, some recipes use other vegetables, such as kale and potatoes.

Why this recipe works

With every spoonful you take, you experience the great, consistently creamy, flavor in the soup.

2. A great feature of this dish is that it is extremely cost cost-effective. In these days of fast valuation in the grocery store and the high-priced keto diet, One is one of the keto dishes that is more about what you already have, rather than what you don’t have.

Ingredients

Kale- It is rich in vitamins A and K and will increase up the color of this main dish.

Cauliflower- It is the go-to keto alternative for potatoes. Cauliflower is great because it soaks up all the soup’s flavors and adds bulk and thickness to the soup.

Italian Sausage- It is a great protein source and will enhance the overall flavor of the soup. If you are not a fan of it, you can also use breakfast sausage or diced chicken thighs instead.

Chicken Broth- In this recipe, I used chicken broth because I do not like beef broth. I preferred chicken broth because it is lighter and suits the taste I wanted for this soup. If you don’t like chicken broth, go ahead and replace it with bone broth, beef broth, or any other soup base you have.

Yellow Onion- A notable ingredient in a lot of keto recipes. A little half of an onion is not too much to add to a soup that is going to serve several people. It is worth adding the a couple plus carbs that the onion is going to add to the dish.

Heavy Whipping Cream- A low carb and keto must-have ingredient. It will help a lot to add to the creaminess of the soup.

Bacon- Everything is better with bacon. It also adds a bit of saltiness to the soup, which helps bring out the other flavors.

Seasonings- This recipe includes salt, pepper, some crushed red pepper flakes, and a bit of garlic. If any of these are a bit aggressive for your taste, feel free to use your intuition to adjust the amounts.

How To Make Keto Creamy Zuppa Toscana Soup

1. The first step to this delicious low carb soup is brown the onion. In a separate large pot over medium heat, add the olive oil, onion and bacon.

Then, mix them together. You will need to cook this mix for around 3-4 minutes until the onion begins to brown and start to smell sweet. During this, the bacon should also be crispy.

2. In the same pot, add the Italian sausage. This should also be browned and should take about 7-10 minutes. Then, start breaking the meat down into smaller pieces. You will need to continue browning until there is no more pink meat

3. After that, add the cauliflower florets and kale. Personally, I like to chop these up so they are smaller and easy to eat.

If kale isn’t your thing, you can easily swap it out for spinach or any other leafy green you enjoy.

4. Pour your broth into your soup pot. Some pieces of the meat should have browned at the bottom. Be sure to scrape those up.

5. Now, for the part that makes the soup creamy. You’re going to add some…yes, cream! Heavy cream makes the soup taste good and is high in fat. It’s also what makes the soup more keto friendly. I try not to cook my cream too much, so I add it at the end of the recipe.

You might find some keto Zuppa Toscana recipes that call for 1 to 3 cups of cream. I find that if you put a lot of cream in the soup, it makes the soup taste milky and overpowers the other flavors.

To this recipe, I added 1/2 cup of heavy cream, but if you really think you need more than that, you can add it in some small 1/4 cup increments for a total of 1 cup.

Creamy Zuppa Toscana soup keto friendly ?

The original recipe for Zuppa Toscana soup includes potatoes and roux, which makes it not keto-friendly. With my low carb keto Zuppa Toscana recipe, there aren’t any of those ingredients. Therefore, it’s perfect for anyone on a low carb or keto diet!

There are plenty of other reasons why the recipe may not be a perfect fit for you. That’s totally okay! Just adjust the recipe, alter the portion size, or change the side dishes to suit your diet and preferences.

The note about carbs

The carbs in this recipe are nutritious, as they primarily come from the vegetables.

A diet with a complete absence of carbs, or a very minimal amount of carbs, makes no sense to me. There’s no reason to be scared of vegetables, and you should be eating a lot of them!

However, if you need to reduce the carbs further, you can definitely still have a keto Zuppa Toscana. The easiest way to achieve that is by using less onion and cauliflower.

Those two ingredients are what give this recipe the most flavor, but they also happen to have the most carbs.

Tips and substitutions

Do you enjoy a little spice in your recipes?

If you want to make it even more spicy, try using spicy Italian sausage. The cream in the soup balances out the spice, but if you’re cooking this for kids, or you just don’t want spice, feel free to use sausage instead.

What I really dislike about meaty dips and soups is how greasy they get. If you’re cooling your soup and want to get rid of some of the grease, just skim it with a cooking spoon, a paper towel, or some plastic wrap, and the grease will come off.

Ingredients

  • 1 pound ground Italian sausage

  • 1 teaspoon salt

  • 4 slices bacon, chopped

  • 2 teaspoons Italian seasoning

  • ½ teaspoon garlic powder

  • 2 tablespoon olive oil

  • ¼ cup chopped white onion

  • ¼ teaspoon ground black pepper

  • 2 cups cauliflower florets, chopped into bite-size pieces

  • 32 ounces chicken broth

  • 2 cups kale, chopped

  • ½ cup heavy whipping cream

Directions

  • In a large soup pot over medium heat, add the onion, bacon, and olive oil. Sauté for 3–4 minutes until the onion is fragrant and the bacon is nicely cooked.
  • Add the Italian sausage to the pot and cook until there’s no pink left, about 7–10 minutes. Carefully drain any excess grease, then return the pot to the heat. Stir in salt, Italian seasoning, garlic powder, and pepper until everything is well combined.
  • Turn the heat to high and add the kale and cauliflower. Pour in the broth and stir everything together. Bring the soup to a gentle boil for 5 minutes, then cover and reduce the heat. Let it simmer for 20 minutes.
  • For a thicker soup, after the initial 20 minutes, remove the lid and let it cook down to your desired consistency. Keep in mind, this version won’t be as thick as traditional Zuppa Toscana since it doesn’t include starch.
  • Stir in the cream until fully combined, then serve warm and enjoy!

Notes

  • Traditional Zuppa Toscana uses potatoes and a roux, but this version keeps it low carb while still creamy and satisfying with just a touch of heavy cream.
  • You can swap greens, adjust cream, or reduce higher-carb veggies to fit your dietary needs without sacrificing flavor.
