For the rolls

• Whole Milk: The sugar present in the milk helps nourish the yeast in the absence of sugar. Substitution: Can also use warm water but add a teaspoon of real honey.

• Eggs: Not only do they add moisture and richness to the dough but also add to the texture of the rolls overall. Substitution: I have not tried any egg substitutes for this recipe.

• Butter: Adds to the texture and taste of the rolls. Substitution: I have not attempted any substitution.

• All-Purpose Flour: Gives the real bread texture. Substitution: Maybe gluten free flour if necessary.

• Pink Salt: Enhances taste and provides necessary minerals required on a keto diet. Substitution: Normal sea salt works but misses the mineral benefits.

• Monk Fruit Allulose Sweetener: Adds sweetness and does not have an aftertaste. Substitution: Any granulated keto sweetener works but allulose helps keep moisture.

• Active Dry Yeast: Adds a bread rise and real bread taste. Substitution: Instant yeast works but rising time has to be adjusted.

For the filling

Best Brown Sweetener: It has the appropriate texture as this one also has that traditional cinnamon roll flavor. Substitution: Any keto brown sugar substitute would work, although this one has the best taste, but the amount and final texture may differ.

Oven: If you want the outside to be warm and firm, you need to heat the oven to 350. You must put the foil on the rolls to protect the rolls from the foil.to keep from the rolls being over brown. You can heat them for 15 minutes, or 5 minutes, and then check.

Air Fryer: Preheat an air fryer to 300 degrees Fahrenheit (150 degrees Celsius). Put the basket in the air fryer, and set the timer for 5 to 8 minutes, checking often so as to not let the cinnamon rolls burn.

Ingredients

  • For the Rolls

  • 1 cup warm milk

  • 1/3 cup butter melted

  • 3 1/2 cups all-purpose flour

  • 2 eggs room temp

  • 1/2 cup Monk fruit and Allulose Sweetener

  • 1 package active dry yeast

  • 1 tsp pink salt

  • For the Filling

  • 1 cup Brown Sweetener packed

  • 1/3 cup butter softened

  • 2 1/2 tbsp ground cinnamon

  • For the Frosting

  • 3 ounces cream cheese softened

  • 1 1/2 cup Monk Fruit and Allulose Powdered Sweetener

  • 1/4 cup butter softened

  • 1/8 tsp pink salt

  • 1/2 tsp real vanilla extract

Directions

  • In a large bowl, dissolve the yeast in warm milk. Stir in the sweetener, butter, salt, and eggs. Gradually add the flour in portions, mixing well after each addition. The dough will be a bit stiff if it’s hard to mix, dust your hands with flour and finish kneading by hand.
  • Shape the dough into a large ball, place it back in the bowl, and cover with a dishcloth. Let it rise in a warm spot for about an hour, or until it doubles in size.
  • Preheat the oven to 400°F (200°C).
  • Roll the dough into a large rectangle, making sure it’s not too thin to avoid tearing. Spread with softened butter, then sprinkle the cinnamon and brown sugar mixture evenly. Roll the dough up and cut into 10 pieces, discarding the two ends to get 8 nicely sized rolls.
  • Arrange the rolls in a lightly greased 9×13-inch baking pan. Cover and let them rise until nearly doubled, about 30 minutes.
  • Bake in the preheated oven until golden brown, around 15 minutes. While baking, mix the frosting ingredients and spread or drizzle it over the warm rolls before serving.
