- Prepare your filling and keep it hot.
- Sterilize canning jars lids and rings in boiling water for 10 minutes.
- Spoon the hot cherry pie filling into the sterilized jars. Make sure to leave 1/2 inch of headspace. Take a clean cloth and dampen it to carefully clean the rims of the jars.
- Center the lids on the jars and place the rings on top. Tighten the rings on the jars until just barely finger tight.
- Make sure jars are covered by at least 1 inch of water and process the jars in a water bath canner for roughly 25 minutes (and adjust for altitude if need be).
- Take the canning tongs and carefully pull the jars out and allow them to sit on a towel or cooling rack for 12 to 24 hours without touching lids.
- Once the jars are finished cooling, check to see if the lids are sealed; one way to check if the lids flex when you press on the center. And your sealed jars can be kept in a cool and dark place. If you have jars that are unsealed, then they should go into the fridge and be used within five days.
