Here’s everything you need to make my perfectly sweet cinnamon sugar churros:
Gluten-free flour: Mixed with almond and coconut flour, these keto churros are fantastic. For all your keto baking needs, both are great low carb flour alternatives.
Keto sweetener: With this recipe, the granulated erythritol will bake just like your everyday sugar, but sweeter and keto friendly.

Baking powder and xanthan gum: A small amount of baking powder helps the churros puff up, while xanthan gum makes a big difference in texture. It’s my go-to ingredient for better gluten-free baking.
Butter: Unsalted butter adds rich flavor and boosts the fat content, which is perfect for keto churros.
Vanilla: Vanilla extract brings everything together and adds warmth to the flavor. It’s a small step, but definitely worth it.
Egg: The egg helps bind the dough, which is especially important in gluten-free recipes.

How To Make Keto Cinnamon Churros At Home
You can easily learn to make low-carb churros without much hassle. Use this guide to make this delicious Mexican dessert in your kitchen!
Step 1: Dissolve sweetener
The first step is to heat in a medium saucepan water, butter, and erythritol. Let the mixture heat until the erythritol dissolves and the butter melts.
Step 2: Dough Formation
Then, take the saucepan off the heat and then add the dry ingredients, which contain almond flour, coconut flour, baking powder, and xanthan gum. At this point, the mixture is still a little soft.
Step 3: Cooling and Additional Ingredients
If the dough is still warm, let it cool down a little before incorporating the vanilla extract and egg. Then, the dough can be piped!
Step 4: Piping and Frying
For the churros to take their authentic shape, pipe the dough into a star tip piping bag. While doing this, warm up oil in a deep pot or skillet over medium-high heat. Once the oil is ready, pipe dough into 4-5 inch long churros directly into the hot oil.
I prefer using scissors to achieve a neat cut! Fry the churros until they achieve a crisp texture on the outside and a golden brown color, and then remove them from the oil with a slotted spoon.
Place them on a plate lined with paper towels to absorb any excess oil.
Step 5: Cinnamon sugar coating for your churros
In a small bowl mix a little granulated erythritol with cinnamon, then roll your churros in the mixture as they come out warm from the oven. Voila, your keto churros are now ready to eat.
How To Serve Cinnamon Churros
These keto churros are amazing as is, but you can take it to the next level with a sugar-free and low-carb sauce for dipping. You can try a sauce made with blended strawberries, but I prefer to use my sugar-free chocolate syrup for a chocolate churro.

Why aren’t my cinnamon churros as crispy as I want?
Churros not turning out as crispy as you want? Consider these ideas:
1. Oil temperature: Ensure to always keep your oil temperature at 350°F so the churros always come out crispy.
2. Not enough space: When you pipe the churros, keep enough space between each churro so that the pieces don’t puff together.
3. Fry time: Patience is key! I promise that the churros will be done at that point, and they need to be a rich, glowing golden before you go to take them out.
4. Dough consistency: Churros that are firmer tend to be crispier. If the consistency is too wet, consider adding just a bit more flour to the dough.
What is the difference between Mexican and Spanish churros?
Churros al estilo español and churros al estilo mexicano are two types of churros. While the Spanish churros use a more simple recipe of just flour, water, and a pinch of salt, the Mexican churros take it a step further by incorporating sugar and cinnamon as well.

For the Coating:
2 tablespoon granulated erythritol
½ teaspoon ground cinnamon optional
Directions
- Add the water, butter, and erythritol to a medium saucepan. Heat over medium heat until the butter melts and the mixture just starts to simmer.
- Remove from the heat and stir in the almond flour, coconut flour, baking powder, and xanthan gum until a soft dough forms.
- Let the dough cool slightly, then mix in the egg and vanilla until smooth and fully combined.
- Spoon the dough into a piping bag fitted with a star tip.
- Heat coconut oil in a deep skillet or pot over medium-high heat, using enough oil to fully submerge the churros.
- Pipe 4–5 inch strips of dough directly into the hot oil, cutting the dough cleanly with scissors or a knife.
